Pumpkin, acorn, kambocha squash
5 eggs
1 c. coconut milk
1/3 c. coconut palm or white sugar
Pinch salt, cinnamon, cardamom
1 tsp vanilla extract
Steamer pot large enough for squash above the water, enough for 45 min.
Cut circle around the squash stem to make a lid. Set that aside, clean out seeds.

Golden or red beets or both
Maché or baby arugula—a few leaves per serving
Crème fraîche or Greek yogurt
Honey
Lemon—a few drops into the honey
Separate plates
Discard greens, cut beets into quarters.
Steam until easily pierced, about 8 minutes
Cut into bite size pieces
Smear a bed of crème fraîche
Sprinkle lettuce

Artichoke hearts- 12 ish quartered
Lemon juice—hearty squeeze
White wine—small puddle
Garlic— 2 cloves, minced
